  • Jalapeño Burger Cooked on a Salt Block
    1. Step 1 of 4: Jalapeño Burger Cooked on a Salt Block

      Heat salt block on a medium grill for 15 minutes. While salt block is heating, wash Bibb greens and put to the side.

    2. Step 2 of 4: Jalapeño Burger Cooked on a Salt Block

      Combine red onion and jalapeño in a food processor. Process until small chopped.

    3. Step 3 of 4: Jalapeño Burger Cooked on a Salt Block

      In a large bowl, mix cheese, old bay, black pepper, pork, beef, and chopped onion and jalapeño mixture until it forms a loose ball. (Do not overmix!)

    4. Step 4 of 4: Jalapeño Burger Cooked on a Salt Block

      Form the ball into 2 patties and place on salt block. Let cook for roughly 7 minutes, then flip. Cook for roughly 7 more minutes. Serve on toasted English muffins with Bibb greens.

      In a shaker, add all ingredients except the salt-dipped lime peel. Shake vigorously for 2 minutes.

      Strain over ice-filled glasses and garnish with salt-dipped lime peel.

For the burgers:
1 pound of pork
1 pound of beef
1 jalapeño, charred
1/4 cup red onion
1-1/2 teaspoon old bay (with blackening)
1/8 cup of pecorino cheese
1 whole shallot, thinly sliced
2 large English muffins, toasted 
1/2 head of Bibb lettuce
Black pepper (to taste)
1 Himalayan pink salt block (optional) 
For the margaritas: 
1 lime, juiced 
2 ounces tequila 
1 ounce aquavit 
1 teaspoon agave nectar 
 2 egg whites 
1 salt-dipped lime peel 
 4 cups of ice
