      Combine the flour, sugar and baking powder. Wisk together.

      In a mixing bowl, combine egg, juice, oil, vanilla, yogurt and mix until smooth.

      Add the dry ingredients to the wet ingredients, mix. Then stir in the blueberries, reserving a few for the top.

      Spoon dough into muffin tins, top with a blueberry and bake at 400 degrees for 25 minutes.

      Let the muffins cool completely and enjoy!

1 ½ cups whole wheat pastry flour (or all purpose flour)
½ cup sugar
2 teaspoons baking powder
1 egg
½ cup juice (any kind: cherry, apple, orange)
¼ cup canola oil or light olive oil
1 tablespoon plain yogurt
1 teaspoon vanilla extract
1 cup blueberries (or sliced strawberries or pitted cherries)
