Step 1 of 3: Quinoa Salad
Rinse your quinoa. To cook in a rice cooker, add 1/2 cup quinoa and 1 cup water and cook on white rice setting. For a pot, add 1/2 cup quinoa and 1 cup water. Boil and then simmer for 15 minutes. Let quinoa cool.
Step 2 of 3: Quinoa Salad
Chop your green onions and apples. Add them to a bowl with lime juice, oil, and seasoning. Then add jalapeños, cilantro, black beans, and cooled quinoa. Mix together
Step 3 of 3: Quinoa Salad
Put quinoa salad over some napa cabbage and top with cotija cheese (optional).
